juice juice juice

lately we've been getting back in the habit of juicing. twice a week, i make a little under 2 gallons of fresh juice. it's really, really good. but what to do with all the pulp?? i could put it on the compost...but i would much rather put it into our bodies. i used to not juice much because it seemed like a waste of perfectly good fiber. then i figured out that i can use that pulp for baked goods. so that's what i do once a week now as well. bake with pulp. the first thing i did was make cookies, they were really good, then i made muffins, then waffles, then muffins again. we still have some of the waffles in the freezer! i made some whipped topping for the waffles that was a big hit as well.

for roughly 2 gallons of juice i use 6 pounds of apples, 8 pounds of oranges and 8 carrots. i save the apple and carrot pulp together for baking and use the orange pulp for smoothies if they have no seeds. if they have seeds, the pulp goes on the compost.

and of course, there are pictures!!! like i've said before...what did we do before digital cameras made us feel the need to document the hell out of everything???

That is great! I just toss the pulp on the compost pile and figure at least it gets to be great dirt! Can you post your recipes for muffins, waffles, and cookies using pulp as an ingredient? The muffins you shared at the park were great, thick and moist and the kids thought they were wonderful. I think if I tried this they would end up being too wet, so what is your secret?????

wow, if you thought those were moist i'm gonna have to check your mouth for confusion. because it is confused. i thought they were dry!!! i made some today using a different recipe and they turned out really really moist and yummy. i'll share the recipe now for muffins since my other ones were very made-up-as-i-went!! this recipe is from a basic muffin recipe that i altered for using pulp. it makes a lot since there is a lot of pulp.

5 c. flour
1.5 c. sugar
10 t. baking powder
1.25 t. salt
5 eggs, beaten
2.5 c. milk
1 c. oil
5 c. pulp
2 c. raisins
cinnamon
cardamom
and nutmeg (i have no idea how much i used of each of these. probably 2 t. cinn. 1/2 t. nutmeg, 1/2 t. card....but i really don't know, i usually just throw that in)

mix dry ingredients in a LARGE bowl. in another bowl, beat the eggs, add oil and milk and beat to frothy. pour into the dry mix and stir until moistened. mix in the pulp and then add in raisins (nuts too if you like) and mix well. these will not rise much due to the high moisture content and weight of pulp (and ww flour). so fill muffin tins to brim and bake at 400 for 30 minutes.

The muffins ROCK! I was asking the same thing as Jess.:) Glad you posted the recipe.

I had to laugh at your comment about documenting the heck out of everything. I have several pics of MEALS waiting to be posted and I was thinking how silly I am to take pictures of it all. But later I'm glad.
